How would one go about converting to Catholicism..........?

You can call your local Catholic Parish office and ask about Rites of Christian Initiation Cles. I don't believe that you will be re-baptized since your Methodist baptism was probably in the name of the Father, Son and Holy Spirit. Welcome Home! And God bless!
